So I'm making a new character and I've never played a sneak thief type character. I have the SkyRe mod that makes a new skill tree called fingersmith, and I have another that makes it so i have to have a certain number of stolen items and picked pockets and locks to join the Thieve's Guild (I can change that but it does make sense).

Anyway, every time I try and pickpocket someone they catch me right away. How do I do it and not get caught? Are certain targets easier than others? I know I can only take certain things early on, so it's not like I'm trying to take someone's armor or something. Thanks for the help.

I avoid pickpocketing for that reason, but the advice I always see is save often. It does show your chances when you highlight each item. I imagine succeeding with lower chances improves your skill more.

If I were focusing on pickpocketing, I would definitely get that perk that lets you pickpocket during combat ASAP. Seems fun.

Be careful and get it sort of high, and then steal every single arrow from every guard in the game. That is the best way

Pickpocket chance is liked to the value and weight of the item. Stealing small stuff like rings and a few gold pieces almost always succeeds, but stealing weapons and more expensive jewlery usually fails at early levels.

The best way to level pickpocketing fast is to find some rich people (like the thanes in the Blue Palace) that have expensive jewelry on them. Sneak up behind them and quicksave. Then if your pick fails, just load the quicksave and try again. Rinse and repeat for every item you try to steal. It's tedious, but it levels up pickpocketing really quickly (I don't use SkyRe so I don't know about this fingersmith business) and you can then get some perks to make it easier.

I'm afraid I don't know much about the mod since I'm on 360, but for some advice from the vanilla game:

-Staying hidden increases your chances, but its not necessary. So a good sneak skill helps out a lot, but again, not necessary.

-Under normal circumstances, don't take anything under 20% chance.

-Sorta cheap, but helpful for the beginning; quicksaving before you pickpocket and reloading the save if they catch you works.

-Check everyone's (and I mean everyone except Guards) pockets

As for leveling (which in turn helps you from getting caught and increases your chances), almost everyone has some sort of ring that's worth a lot. The amount of XP gained is based on the value of the object (this applies to a lot of skills). Some people also have enchanted jewelry. Pickpocketing enchanted items or gold-diamond jewelry would be the only situation where you'd attempt pickpocketing something under 20%. Don't worry about stealing money as much as jewelry, either.
